Carrots for Fiona

Well actually for Fiona Bunnys' Mom!

COPPER COINS

Peel and slice 2 packages of carrots into coin shapes and cook in salted water 8-10 minutes.
Drain and add:
1 thin sliced onion
1 small, chopped green pepper
1 undiluted can Tomato Soup
1/2 cup salad oil
3/4 cup sugar
1/4 cup vinegar
1 tsp. pepper
1 tsp. dry or regular mustard
1 tsp. Worchestershire sauce
1 tsp. basil
Mix well, cover and refrigerate over night to allow flavors to meld.

This makes a nice, cold side dish and is very popular at church dinners.




BEST CARROT CAKE
1 1/2 cups Wesson oil
2 cups sugar
4 eggs
2 cups flour
2 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
2 tsp. vanilla
3 cups grated carrots

Set 0ven for 325.
In a large mixing bowl,combine sugar and oil.
Add eggs.
In separate bowl, sift flour, baking soda, salt and cinnamon together.
Add to sugar mixture and beat well.
Add vanilla and grated carrots.
Stir gently until well mixed.
Bake in 3 8" baking pans that have been well greased, for 45 minutes, 1 hour for a 9" x 13" pan.
When cool, ice with Cream Cheese Frosting.

CREAM CHEESE FROSTING
1 stick butter or margerine
8 oz. cream cheese
1 pkg. confectioners sugar
2 tsp. vanilla
Beat softened butter and cream cheese together.
Add confectioners sugar and vanilla, and stir until good spreading consistency.
Frost cake.




CARROT CASSEROLE
12 carrots
1/2 c butter
2 tbsp. dried onion
1/4 c flour
1 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. pepper
1/4 tsp. celery salt
2 cups milk
1/2 lb. sharp cheddar cheese
bread crumbs

Slice and cook carrots, and drain.
Make a sauce with remaining ingredients, except cheese and breadcrumbs.
In a 1 qt. casserole, layer 1/2 the carrots and the cheese ending with remaining carrots.
Pour sauce over all and top with bread crumbs.
Bake at 350 for 25 minutes.
