The January/February BlahsThe holidays are over and its as dead as a doornail (whatever that is) around here. I have not posted in quite a while because quite frankly, there's nothing going on to post about, and maybe that's a good thing, because as they say,(whoever they are) no news is good news.
I've been catching up on my reading and I've started crocheting a new afghan. We've been listening to the Bible on CD every morning and renting a lot of movies to view at night. Other then that, one day blends into the next as time whizzes by. Before you know it, the crocus and daffodils will begin pushing their way up out of the garden, and I can't wait.
When I'm bored I usually start thinking more about food and craving baked goods. I've been going through my recipe file, looking for a good chocolate cake recipe and I recently came across one that my daughter picked up while on a summer singing tour in 1996, that I thought I'd share with you. It may be just the thing to chase away the blahs!
CHOCOLATE CHIP CAKE
1 package yellow cake mix (such as Pillsbury or Duncan Hines)
1 small package instant chocolate pudding mix
1/2 cup of veg. oil
1 cup sour cream
4 eggs
1/2 cup water
12 oz. of mini chocolate chips
Preheat oven to 375.
Grease and flour a Bundt pan lightly.
In Mixer: combine cake mix with chocolate pudding mix.
Add the liguids and eggs and mix for 4 minutes on medium speed.
Stir in chocolate chips.
Pour into Bundt pan.
Bake for 50-60 minutes.
Keep an eye on cake towards the end of baking time to make sure cake doesn't get overdone.
Cool and glaze or powder with confectionary sugar or icing of your choice.
GLAZE
1 cup confectionary sugar
3 Tbsp. butter, softened
2 Tbsp. hot water
1 envelope choco bake
1/2 tsp. vanilla
Beat in a small bowl until smooth.
Drizzle over cake.

Grammie, mom says that sounds yummy. She's a chocolate addict just the way we like our catnip! Does Timmy help in the kitchen with your cooking & baking???
Yes, Scooby, Shaggy and Scout - We get lots of help from Timmy in the kitchen. He is kind of like the boss, overseeing everything that goes on there! He pretends to be interested in what we are doing, but he is really always on the lookout for stinky goodness and crunchies.
My Mom says that sounds yummy too. She's a lot like Scooby, Shaggy and Scout's Mom, it sounds like. You can't blame Timmy for being on the lookout for stinky goodness and crunchies, tho. I hope your weather cheers up soon, Grammie :)
Hi, Grammie ~ we hope the weather improves up there. It has been unseasonably warm down here but Mom said we are going to get dose of winter this weekend. We like to supervise in the kitchen like Timmy too especially if chicken is involved in cooking! Mom said your chocolate chip cake sounds wonderful. Purrs....
This period between the holidays and spring is the pits. I am looking forward to the next Amazing Race and the start of the Olympics. Also knitting up a storm and sweeping up Puff's cardboard chewings keeps me busy!
