No fun without the sun!For the first time in a long while, the sun is shining. The weather lately, has changed on a daily basis; rain one day, snow another, with a little sleet thrown in here and there. The rest of the time it has been cold, glum and depressing and it has left me tired and listless. Even Timmy has been laying around much more than usual. In the last few days we have found him sleeping in a box, in a grocery bag, and early this morning, in the bathroom sink.
In winter, I like to hybernate in my warm and cozy house with my books, computer and TV, but for the last few days, all I have wanted to do is sleep. So I welcome the sunshine and hope that it renews my strength and interest.
There's nothing nicer than a good, stick to your ribs casserole on a cold winters night, so here is one of my favorites.
CHICKEN CASSEROLE
4 cups diced, cooked chicken
2 cups cream of chicken soup
1 1/2 cup mayonnaise
2 cups diced celery
2 cups cooked rice
2 Tblsp. chopped onion
2 Tblsp. lemon juice
Topping:
2 cups crushed Fritos or potato chips
1/2 cup margerine
1 cup sliced almonds, optional
Mix together first 7 ingredients in a buttered casserole.
Refrigerate over night.
Return to room temperature.
Brown topping in margerine and sprinkle over casserole.
Bake at 350 for 50-60 minutes
This recipe serves 12. Divide in half for smaller amount. (I like to make 2 - one to serve and 1 for the freezer. If freezing, put topping on when ready to bake.)

Mmmmm. Grammie mom says this sounds yummy. But she wants to know why do you put it in the frigerator overnight?
And we kittycats want to know if you have a good recipie for catfood?????
Scooby, Shaggy and Scout - I really don't know why this dish is refrigerated overnight. Perhaps it is so that the various
ingredients have time to blend together. I'm sure you could bake it right away if you want to, but this is the way the recipe was given to me and I sometimes find it convenient to make up in advance. As far as cat food goes, I'll check it out and get back to you.

I am wondering if you could can the sun, so you could go down to the big dark hole an take out a can an open it when the sun doesn't appear in the winter times. Maybe you could find a recipe for canned sunshine Grandma, you think?
