Grammie's Little Helper

That's no mouse under my chair, its my "handy dandy" little helper, Timmy! My afghan is almost complete and I'm planning a baby blanket for my next project. The design is called "Lacy Ripples" and the problem is that I've misplaced the directions. Too bad I couldn't get my little adopted grandfurbaby, Sheriff Jinky to investigate the whereabouts of the pattern!
It's really cold out today so I thought I'd share my favorite soup recipe with you. I like to serve it with a hot loaf of homemade bread right out of the bread machine :)
V8 Soup
1-2 Tbs. Olive Oil
1/2 Lb. Ground Turkey
1 Red Pepper, seeded
3-4 Garlic Cloves
1 Small Onion
4 Cups of Water
2 teaspoons Granulated Chicken Boullion
3 Cups of original V8 juice
dash of Thyme
1 teaspoon worchestershire sauce
1 pkg. Frozen Mixed Veggies (your favorite brand)
2/3 cup Ditaloni Noodles (or other small noodle of your choice)
Add red pepper, garlic cloves and onion to food processor and chop fine. In a large pot or soup kettle, add olive oil and brown the meat. Add chopped red pepper, garlic and onion to the meat and saute for a few moments. Add remaining ingredients and stir well. Cover and bring to a boil. Reduce heat and simmer until noodles are tender (about 1/2 hr).
Cover and let soup sit until ready to serve. Reheat if necessary.
This is a delicious and healthy one-dish supper and the leftovers are great for lunch! Jenn always likes to sprinkle a bit of shredded cheddar cheese over hers' for more flavor.

Hi, Timmy's Grammie - our Mom remembers that our Grammie used to make something like a green bean patty with cheese melted on top. She hasn't been able to find the recipe - do you happen to have a recipe similar to that? Mom is looking through all the cookbooks.

To Mia and Gosts' mommy Jen, The closest I can come up with is for Green Bean au graten:
1 lb. green beans or 2 pkgs. frozen green beans boiled and drained.
1 1/2 cups hot cheese sauce or Mornay sauce
1/3 cup coarsely grated sharp cheddar cheese
1 tblsp. melted butter or marg.
Preheat broiler. Arrange beans in an ungreased 2 qt. shallow au gratin dish or casserole, cover with cheese sauce, sprinkle grated Cheddar on top and dot with butter. Broil 5" from heat 3-4 minutes until cheese melts and is nicely browned. Lima beans may be substituted.
I'll keep looking for your Mom's recipe and post it if I find it!
To Mia and Ghosts' Mom - Timmy searched the internet and came up with the following:
Fresh Green Bean Fritters
A recipe for green bean fritters, using green beans or both green and yellow wax beans.
INGREDIENTS:
2 cups fresh green beans, cut in 1/4-inch pieces and cooked until crisp-tender
(use both green and wax beans if you have them)
1 1/2 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
1 egg, beaten
1 cup milk
oil for deep frying
PREPARATION:
Heat oil in deep-fryer to 370°.
In a medium bowl, stir together flour, baking powder, and salt. In a separate bowl, whisk egg with milk; stir in beans. Add bean mixture to dry ingredients, mixing until just moistened.
Drop batter by tablespoonfuls into hot oil (370 °). Deep-fry in batches until golden brown, or for about 3 to 4 minutes. Remove to paper towels to drain.
Makes about 18 to 24 fritters.
Thank you Grammie & Timmy - we will try them out... Our Granddaddy tried & failed in making something that turned out like muffins (he wouldn't even eat them)! Our Grammie had lots of cookbooks so Mom is having to look through a lot.
