Ricotta Cheese CakeMy sister-in-law gave me this recipe several years ago and I just love it. You can serve this to company or take it to a pot luck and watch it disappear - its a real crowd pleaser!
Ricotta Cheese Cake
Prepare 1 package of yellow cake mix according to directions on box.
In a separate bowl mix together:
2 lbs. ricotta cheese
1 cup sugar
4 eggs, beaten
1 tsp. vanilla
Grease and flour a jelly roll pan.
Pour prepared cake mix into pan and spread evenly.
Gently spoon ricotta cheese mixture over cake mix,swirling around carefully, to cover top, but not all the way thru.
Bake at 350 degrees 1 to 1 1/2 hours, until light on top.
Cool cake completely before cutting.
Sprinkle with confectionary sugar.
Store cake in refrigerator until ready to serve.
Refrigerate leftovers.

Grammie, do you have a recipie for a pasta tuna and/or chicken salad? Mom wants to know. She is allergic to nuts and peas so it can't include any of those......Plus it has to be easy because mom is an imbecile in the kitchen.
Here is a super chicken salad recipe for your Mom. Tell her that I'll find her some others soon!
Chicken Salad Supreme
2 1/2 cups cooked chicken, diced
4 bacon strips, cooked and crumbled
1 oz. can sliced water chestnuts, drained
1/2 cup celery, thinly sliced
1 cup seedless grapes, halved
3/4 cup mayo or salad dressing
1 - 2 Tbsp. dried parsley flakes
2 tsp. minced onion
1 tsp. lemon juice
1/4 tsp. ground ginger
dash worchestershire sauce
salt and pepper to taste
Combine chicken, bacon, water chestnuts, celery and grapes in large bowl.
In another bowl, whisk together remaining ingredients, add to salad and toss to coat. Chill until serving.
serves 4-6
