Salad for a CrowdSeveral years ago I attended a big Christening party, where they served the crowd buffet style. I kept hearing everyone raving about the salad, so I tried it and found it to be delicious. After some pleading, I managed to get the recipe from the hostess and I've been making it for pot lucks and backyard BBQ's ever since. This recipe is easily doubled and is made up the day before and refrigerated until ready to serve.
9 Layer Salad
In a large pan or salad bowl layer:
1 head of lettuce, shredded
3 stalks of celery, thinly sliced
1 large green pepper, sliced or diced thin (optional)
1 medium red onion, cut into thin rings
1 package frozen baby peas, that have been cooked 1 minute (optional)
8 oz. medium or sharp cheddar cheese, shredded
1 can sliced water chestnuts, washed and drained
Topping:
Mix together well and spread over vegetables:
8 oz. sour cream
1 cup mayo
3 Tbsp. sugar
Crumble 8 slices of crispy cooked bacon over topping.
Cover and refrigerate over night.
WHEN READY TO SERVE, TOSS WELL.

We have a neighbor who makes something very similar and brings it to every potluck & neighborhood get together. She is stuck bringing it every time because everyone expects it & asks where it is if she doesn't bring it.... sss's mom :)
