Spinach QuicheYesterday we couldn't decide what to have for dinner, and didn't feel like doing a lot of cooking, so we resorted to an old favorite: Spinach Quiche. This recipe was given to me by a friend many years ago, and I love it because it is so quick and easy.
I love the ease of the Pillsbury Ready made pie crust in the red box, but you can use one of those frozen crusts that come in the aluminum pan, or make your own from scratch. You can even eliminate the crust completly if you wish, by pouring the filling into a buttered casserole and serving it as a side dish.
Another nice thing about this recipe is the fact that you can substitute chopped brocolli or cauliflower in place of the spinach if you'd like, and use any type of cheese of your choice in place of the American.
Spinach Quiche
10 oz. package of frozen chopped spinach, thawed and drained
8 oz. of cottage cheese, small curd
4 slices American cheese, cut up into thin strips (or 4 oz. of cheese of your choice, diced)
3 beaten eggs
4 tblsp. butter, cut into chunks.
Preheat oven to 350 degrees.
Prepare a pie crust in an 8" pie plate or quiche dish.
Mix all ingredients together and pour into crust.
Bake at 350 degrees for 1 hour.
Allow to set 10 - 15 minutes before slicing.
May be cut up into serving sizes and frozen - improves with reheating in microwave.
