The Best CheesecakeDo you love cheesecake as much as I do? Here is a quick and easy recipe that makes a really nice cheesecake.
CRUST:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
5 Tbsp. melted butter
FILLING:
2 8 oz. pkgs. cream cheese, softened
2 eggs
1/2 cup sugar
1 tsp.vanilla
TOPPING:
i cup sour cream
1/4 cup sugar
1 tsp. vanilla
DIRECTIONS:
Preheat oven to 375 degrees. Mix crust ingredients and pat firmly into the bottom and 1/3 of the way up the sides of a 9" spring form pan.
Beat filling ingredients until satiny and pour into crust.
Bake 20 minutes, remove from oven, (carefully) and cool 15 minutes.
Meanwhile, raise oven temp. to 475.
Blend topping ingredients and gently spread over cheese filling. Return to oven and bake 10 minutes more.
Cool to room temperature, cover with foil and refrigerate 10-12 hours, before serving.
You may top with fruit toppings. If you choose to do so, spread over sour cream after removing from the oven after the second bake, before covering and chilling.
