Special Tuna/ Macaroni SaladHi everyone. I'm so sorry that I havn't blogged lately. The arthritis and nerve damage in my hands has acted up something fierce these last few weeks due to the weather, but I feel much better today. I'm posting a great summer one dish meal today, and I hope you will like it as much as we do.
Special Tuna/Macaroni Salad
7 oz. uncooked pasta noodles (use a pretty shape)
1 6 1/2 oz. can of albacore tuna in water, drained
10 oz. frozen peas and carrots
3/4 cup cheddar cheese, shredded (or cheese of your choice)
1/2 cup sour cream
1 cup mayo, lite (or reg. if you desire)
1/2 tsp. garlic salt
1/2 tsp. dill weed
Cook noodles in salted water, adding peas and carrots in the last 2 or 3 minutes of cooking. Drain and allow to cool down.
In large bowl, combine sour cream, mayo, dill weed, and garlic salt, whisking together well.
Add cheese and drained tuna, and fold in cooked noodles, and peas and carrots, mixing gently to evenly distribute all ingredients.
Cover and refrigerate over night or for as long as possible, because the taste improves with chilling.

Plus, we get any tuna water when the can is open, so we LOVE tuna recipies!
