Brocolli Salad

Here is a fabulous salad to go along with Easter dinner. It's my very favorite and I want to share it with you! You make it up the day before and refrigerate over night, tossing just before serving. It's a real crowd pleaser, so be prepared for recipe requests!


BROCOLLI SALAD
1 large Brocolli, floret heads only - cut into bit sized pieces.
3/4 cups raisins
1/4 cup chopped walnuts (optional)
6 slices bacon, fried and crumbled
1/4 cup red onions, chopped fine
1/3 cup cheddar cheese, shredded
Layer ingredients in a large bowl, in the order given.
Spread topping over all, cover and refrigerate.
Toss salad well before serving.

TOPPING
1 cup mayo
1/3 cup sugar
1 Tbsp. cider vinegar
The topping can be made up and spread over salad when putting it together OR it can be made up and applied just before tossing.
Do not make it up and let it stand separately because it will not hold up well by itself.
